Here’s another great way to use leftover turkey from your holiday meals….gather from the garden whatever you can and enjoy this nutrient dense left-over meal. I was able to harvest fennel, green onions and beautiful leaf lettuces for this dish.
1/2 cup sauerkraut…preferably homemade
2 T fresh fennel leaves and / or some of the bulb, minced (the bulbs are not quite large enough on mine)
juice and zest from 1/2 organic tangerine
3 or 4 fresh green onions, chopped using the green part as well
1 large stalk celery, finely chopped
1 1/2 – 2 c leftover turkey, white and dark meat cut into small bite size pieces
1 T macadamia nut oil
1/4 c extra virgin olive oil…preferably Bariani EVOO or Chaffin Family EVOO
Stir together the first 5 ingredients then add the turkey and blend until all the ingredients are well mixed. Drizzle with macadamia nut and olive oils and mix until blended. Serve over lettuce topped with your favorite salad dressing, toss on some crispy walnuts and 1/4 of an avocado and enjoy!
Tip: In this or any recipe if you are using dried herbs rather than the fresh use half the amount called for in the recipe.
Enlightenening side note: In recent months I learned that… surprise…many of the extra virgin olive oils sold in this country are NOT 100% olive oil….several have added canola and / or soy oils. How can this be so you might ask? It is my understanding that if the product contains less than x percent of something other than what is on the label the manufacturer is not required to list it. Unfortunately this is also true of products that contain transfats, MSG and other additives. A number of people have indicated that when they make their own homemade salad dressings the olive oil flavor is so overbearing that you cannot discern any of the other flavors. I will tell you from experience that I have never had this issue with Bariani or Chaffin Family extra virgin olive oils and believe that once you have tasted of the fruit of their labor you will never turn back. Go ahead…the next time you’re in the grocery store read the label on several of the extra virgin olive oils…how many did you find that said 100% extra virgin olive oil?
