Serves 4
2 medium cucumbers, coarsely diced
4 green onions, whites only… reserve tops for garnish
2 cloves garlic
1 large celery stalk chopped
½ jalapeno seeded and diced (optional)
1 Granny Smith apple, cored and diced
2 large avocados
1 ½ c coconut water or milk
½ t sea salt
1 sprig fresh mint chopped, for garnish
Put all ingredients, except for mint, in a blender, food processor or VitaMix and process until smooth. Refrigerate until ready to serve. When ready to serve pour into 4 bowls and garnish with fresh mint and chopped scallion tops.
Variation: Leave some of the cucumber, apple and avocado cut into bite size pieces for garnish or stir into soup before serving.
