This is a simple and quick nutrient dense soup that we enjoy at least weekly. It recently served us well when my husband had some dental surgery that prohibited him from chewing anything for a day…this soup is tasty and nourishing and fit the bill for that situation perfectly.
1 c Windy Meadows Country sausage cooked
2 c cooked kobache or other winter squash (sweet potatoes work well too)
1 c homemade coconut milk
1 1/2 c homemade broth (chicken, beef, fish or turkey)
1 thumb size finger of ginger cut into slices (if using VitaMix no need to peel…otherwise peel and slice)
6 – 7 fresh organic dandelion leaves
1 – 2 stalks celery
12 medium leaves of kale blanched or steamed
Heat coconut milk, broth, and squash…add to VitaMix along with other ingredients and blend until all ingredients are no longer distinguishable on their own. Pour into bowls and garnish with fresh parsley, pumpkin seeds or cilantro…
To upgrade the nutrient density of this soup…add 3-4 ground chicken livers to Windy Meadows country sausage when cooking it. This will not produce a detectible chicken liver taste but will serve to add Thiamin, Zinc, Copper and Manganese, Protein, Vitamin A, Vitamin C, Riboflavin, Niacin, Vitamin B6, Folate, Vitamin B12, Pantothenic Acid, Iron, Phosphorus and Selenium.
